Finca Deborah: A Legacy of Excellence in Specialty Coffee

If you're passionate about specialty coffee, then you’ve likely heard of Finca Deborah. If not, it’s time to get acquainted. Nestled high in the Panamanian highlands, this farm has built a reputation for producing some of the finest Gesha coffees in the world, setting the benchmark for competition-grade beans.

This year, Pack Katisomsakul, our founder at Newbery Street Coffee Roasters, had the opportunity to compete in the 2025 U.S. Brewers Cup using Finca Deborah’s natural anaerobic Gesha, SYMBIOSIS—a choice that earned him third place nationally. But this isn’t the first time Finca Deborah has made waves in the coffee competition world. Many of the industry’s top competitors have relied on its coffee to achieve victory. Mikael Jasin used it to claim the title of 2024 World Barista Champion, while Kay Cheon of Dune Coffee Roasters won the 2025 U.S. Barista Championship with the same remarkable Gesha. Circle Chan from The Coffee Movement also secured a fifth-place finish on the national barista stage with Finca Deborah’s coffee, further solidifying its reputation as a go-to for champions.

The driving force behind Finca Deborah’s success is Jamison Savage, a visionary farmer whose dedication to innovation and quality has redefined specialty coffee. His focus on sustainable farming, precision fermentation, and cutting-edge processing methods has propelled Finca Deborah to the forefront of the industry. From utilizing organic fertilizers to refining processing techniques that enhance flavor development, his meticulous approach ensures that each harvest reaches new heights.

Situated in the Chiriquí province near Volcán, Finca Deborah sits at an altitude of 1,900 to 2,000 meters above sea level, making it one of the highest coffee farms in Panama. This extreme elevation, combined with nutrient-rich volcanic soil and a carefully controlled processing environment, results in a coffee that is renowned for its delicate floral and tea-like characteristics, vibrant acidity, and striking fruit-forward notes.

Innovation is at the core of Finca Deborah’s philosophy. Jamison continuously experiments with fermentation techniques to elevate Gesha coffee’s complexity and clarity. The farm is best known for its Carbonic Maceration, Washed, and Natural processing methods, each contributing to distinct and refined flavor profiles that captivate baristas and coffee lovers worldwide.

Among its standout offerings is Terroir, a coffee that embodies the rugged beauty of Finca Deborah’s mountainous landscape. Grown in the remote reaches of Panama's Volcán region, Terroir presents deep, earthy notes layered with cocoa and a hint of spice, creating a smooth and grounded cup. This coffee encapsulates the profound connection between the land and the bean, making each sip a reflection of its extraordinary origin.

Finca Deborah’s commitment to sustainability is evident in every aspect of its operation. With a solar-powered infrastructure and an unwavering focus on environmental preservation, the farm nurtures its ecosystem while producing coffee of unparalleled quality. This dedication not only enhances the coffee’s flavor but also contributes to the long-term health of the land.

Beyond exceptional coffee, Finca Deborah is deeply invested in social responsibility. The farm provides meaningful employment to the indigenous Nôbe-Buglé people, ensuring fair wages, housing, and access to healthcare. By fostering a sustainable and ethical business model, Finca Deborah is not just crafting world-class coffee—it’s making a lasting impact on the community and the industry as a whole.

With its relentless pursuit of excellence, commitment to sustainability, and undeniable influence on specialty coffee, Finca Deborah continues to set the standard for what is possible in the world of Gesha coffee. Whether you’re a competitor, a roaster, or simply someone who appreciates an extraordinary cup, Finca Deborah’s coffee is an experience worth seeking out.
