We are excited to introduce this micro-lot from Jairo Arcila, a third-generation coffee producer from Quindío, Colombia, and one of the leader of the Arcila family.
Jairo owns five farms: Villarazo, Mazatlán, Santa Monica, Maracay, and Buenos Aires. Each farm contributes to the family's rich coffee-growing tradition, while Jairo continues to push the boundaries of coffee processing through experimentation and innovation.
Today, we are visiting Finca Santa Monica, where Jairo grows a fascinating variety of coffee, including Castillo, Caturra, Gesha, Pink Bourbon, Tabi, Papayo, and Red Bourbon. The farm also grows a variety of fruits and vegetables. Isn't that fascinating?
What makes Jairo particularly interesting is his approach to fermentation. He has been pioneering new techniques by incorporating wine yeast and dried fruits into coffee processing.
The coffee we are experiencing today uses wine yeast during fermentation. I would describe this as co-fermentation because the process introduces wine yeast to influence the coffee's flavor development.
The yeast strain, Saccharomyces cerevisiae, is commonly used in winemaking and brewing. During fermentation, it metabolizes sugars and produces compounds such as alcohol and carbon dioxide. These biochemical reactions influence the development of flavors and aromas in the coffee.
And today, you will experience the results of this process in the cup, with a beautiful blackberry yogurt and candy character that makes this coffee truly special.
