Perfect Honey Cold Foam Over Cold Brew, Flying Bee

Is there anything cooler than enjoying a nice cold brew with some cold foam on top during summer? We are excited to share our new coffee creation with you, a menu that will blow your mind with its great taste. This menu was crafted for the Enoki Market Pop-up in Saugerties, New York, with the help of Deadass Beekeeping™️, who provided us with honey and allowed us to experiment to create a coffee that’s not only amazing but also easy to replicate.

Flying Bee Recipe

Yields: 1 serving
Total Time: 2 minutes
Prep Time: 12 hours

Ingredients

  • Honey: 10g
  • Hot Water: 10g
  • Heavy Cream: 35g (3 TBS)
  • Milk: 25g (2 TBS)
  • Cold Brew: 8 oz 

Directions

  1. Prepare your favorite cold brew over chilled ice.
  2. Mix honey with hot water and stir until fully combined.
  3. Add 3 TBS of heavy cream and 2 TBS of whole milk.
  4. Blend the mixture with a frother until it reaches a frothy consistency.
  5. Pour the honey cold foam over your favorite cold brew.

This recipe is very easy to replicate and prepare. For those who do not prefer cold brew, you can substitute it with a pour-over instead, which works just as well and gives it an Irish coffee vibe, referring to hot brewed coffee with cream. It really depends on how you’d like to enjoy it.

For our base cold brew, we use Thai specialty coffee from Mae Kha Jan, a medium-dark roasted coffee, because it has a rich dark chocolate flavor with a hint of red cherry. When brewed as a cold brew, this coffee is rich, refreshing, and chocolatey. The flavor of this coffee blends well with the honey cold foam, adding a touch of sweetness to the drink. A special shout-out to Enoki Market, who came up with the idea for Newbery Street Coffee Roasters to collaborate with Deadass Beekeeping™️, helping us create this memorable coffee menu. At the pop-up, we sold out of the Flying Bee. One of the things that made us really happy was when customers came in and asked for what they saw others enjoying. “I want the coffee that everyone is holding outside of Enoki Market.”
